The Clos de Cumières 2012 is a champagne masterpiece. After we were allowed to taste it for the first time two years ago at Hervé Jestin's estate, it has finally arrived in Switzerland.
On 19 and 20 April, we will launch the Clos de Cumières 2012 together with the watch manufacturer A. Lange & Söhne in their Zurich showroom on Bahnhofstrasse. For parties of max. 12 people, Hervé Jestin will personally introduce you to the world of biodynamics and tell you how the story of the Clos de Cumières 2012 began 30 years ago.
You will taste the Clos de Cumières 2012 at different stages, so that you get to know all its facets:
- Immediately after opening the bottle ("pull and pour")
- Decanted for two hours
- One week after opening the bottle (without decanting)
- 24 hours decanted (drinking temperature 18 degrees)
Of course, you will also have the opportunity to compare the Clos de Cumières 2012 with Hervé Jestin's other Champagne, the Jestin 2009.
The tasting will be accompanied by dishes as exquisite as they are simple, which are designed to highlight the different flavours of the Clos de Cumières 2012.
Participants in the launch event will have the opportunity to purchase the Clos de Cumières 2012 on site (before the official start of sales).
Here is a selection of the exceptional characteristics of the Clos de Cumières 2012:
- It is made from grapes originating from the 0.49 hectare small “monopole” plot Clos de Cumières in the premier cru commune of Cumières. A “monopole” plot means that Hervé Jestin is the only winemaker who grows grapes on the Clos de Cumières plot. “Monopole” plots are extremely rare in France, and especially in Champagne, due to the successions that have taken place for centuries. The most famous “monopole” plot in the world is the Romanée Conti plot of the homonymous domaine in Burgundy.
- The Clos de Cumières plot is surrounded by ancient, thick walls and in its centre is an 18th century manor house.
- Hervé Jestin (* 1957) is the grandseigneur (or godfather) of Champagne. He became chef de cave of a major Champagne house at the age of 24. In the 1980s, he was one of the pioneers of biodynamics in Champagne.
- The vines growing in Clos de Cumières were planted in 1964 and 1965, making them 58 and 59 years old respectively.
- The cultivation of the grapes and all the processes in the cellar follow the principles of biodynamic viticulture, with special attention to bioenergetics and the lunar calendar. For fertilisation, Hervé Jestin lets sheep walk in the Clos.
- The time on lees lasts for more than nine years.
- The remuage is done by hand on pupitres.
- Only 2,341 bottles of the 2012 vintage were bottled.
